Chocolate Cake with Chocolate Chips, Milk Chocolate Icing and Oreo Buttercream

Ingredients
  

Main Cake

  • 1/2 tsp table salt
  • 8 oz sugar
  • 1 oz drinking chocolate
  • 5 tbsp water
  • 5 tbsp carnation milk
  • 2 medium eggs
  • 1 bag chocolate chips
  • 7 oz self raising flour
  • 4 oz butter / margarine ( stork is good for cakes )

Butter Cream Icing

  • 150 g butter / margarine ( stork is good for cakes )
  • 150 g icing sugar
  • 1 pack snack biscuits

Milk Chocolate Icing

  • 1 bar milk chocolate

Instructions
 

Making the Chocolate cake

  • Heat up oven to 160'c (fan oven temp)
  • Sieve the salt, sugar and drinking chocolate into a mixing bowl
  • Rub in the stork, making "breadcrumbs"
  • Beat the eggs with the carnation milk and add to the mixture
  • Put the water in the egg bowl and add the water to the mixture
  • Add the chocolate chips to the recipe
  • Mix the ingredients together
  • Split the mixture between the two 8" cake trays
  • Bake in the oven for approx 30 mins
  • Test the cakes for "springyness" - tap the centre gently should be firm but rise if pressed
  • Once cooked, removed from oven. Leave to cool for 10 mins then turn onto a wire rack

Making the Milk Chocolate icing

  • Melt the chocolate in bowl in microwave, do in short burst of 1 min
  • Keep stirring the mixture until it's all melted

Making the Oreo Buttercream

  • Place the icing sugar, and butter into a mixing bowl
  • Crush the oreos, or use a food processor. Leave large chunky bits
  • Use a fork and slowly push the icing sugar and butter together
  • Mix in the oreos until a uniform colour, place into the fridge to cool for 10 mins

Completing the cake

  • Place the base of 1 cake on a plate, and cover with melted chocolate
  • Remove the oreo buttercream from the fridge
  • Add to the layer with the melted chocolate
  • Stack the next cake layer on top, pour over the rest of the melted chocolate
  • Leave overnight to cool, then cut up and enjoy. Place in the fridge for 30 mins to cool quicker if you need to enjoy quickly

Notes

The above mixture doesn't account for the time for the cake to cool down, it's simply the cooking time. It's best to allow it to cool overnight as the chocolate will hold it's shape better. Cooling in the fridge is best if needed to cool quickly. If cooling in fridge, leave mixture for 30 mins. If cooling overnight leave for 8 hours, then cut up and enjoy
